The fund of the Presidential Library was enriched with a valuable publication dedicated to the culinary heritage of the Iravan Khanate

A book titled “The Cuisine of the Irevan Khanate” has been received by the Presidential Library. This book, which is the result of many years of scholarly research, is dedicated to the study of ancient culinary traditions of Azerbaijanis living in the territory of the Iravan Khanate and in Western Azerbaijan as a whole, and is an important work from both a historical-ethnographic and a national-cultural perspective.

The book presents rich facts reflecting the everyday life, economic activities, and dining culture of the Azerbaijanis of Iravan. It thoroughly covers daily routines, customs and traditions, as well as elements of material culture of Azerbaijanis, who are the indigenous inhabitants of Iravan. It includes detailed descriptions of household items, agricultural tools, and a wide range of kitchenware.

The book elaborately describes hundreds of unique names of dishes and beverages, the technologies of their preparation, the ingredients and tools used. Overall, the book offers the reader 413 recipes of dishes and beverages, including the technological sequence and traditional methods of preparation.

The monograph, based on historical sources and ethnographic surveys, scientifically documents the cultural heritage of the Azerbaijani population of the Iravan region. At the same time, this study, relying on facts and refuting unfounded Armenian claims, is considered a valuable encyclopedic source dedicated to the material and spiritual culture of the ancient Azerbaijani region.

In the process of the book producing, researchers used information based on the family memory of our compatriots deported from the Iravan region, archival documents, and various historical sources. This approach allows not only to revive the culinary culture but also the social and cultural context of that time.

The publication includes not only recipes for dishes but also historical explanations, notes, and analyses related to the social context. Publishing the book in English contributes to its dissemination among a wide international audience and provides foreign researchers with access to reliable information on the material and spiritual culture of Azerbaijan.
